Looking to trim down and reduce calories?  Try this new recipe for a timeless taste treat.

Honey-Soy Glazed Salmon with Spinach and Peppers

1 Tbsp honey
3 tsp soy sauce
1 1/4 lb skinless salmon filler cut into 4 pieces
1 Tbsp canola oil
1 red bell pepper, thinly sliced
1 Tbsp chopped fresh ginger
3 bunches spinach, stems removed
1 Tbsp toasted sesame seeds

Heat broiler.  In small bowl combine honey and soy sauce.  Place salmon on foil-lined broiler-proof baking sheet.  Season salmon with salt and pepper.  Broil 5 minutes.  spoon honey mixture over salmon and broil until opaque, about 2 - 5 minutes more.  Meanwhile, heat oil in skillet over med-high heat.  Add bell pepper and cook until tender.  Stir in ginger.  Add spinach and 1/2 tsp salt  Cook, tossing, until wilted, 2 - 3 minutes.  Add remaining soy sauce.  Serve with the salmon and sprinkle with sesame seeds.

Irish Cream Recipe

Nothing is more satisfying on a cold winter's day than coffee and Irish Cream.  In Nelson we're lucky to have some of the best coffee in the world.  Here's a recipe for some of the best Irish Cream in the world.

3 eggs
2 Tbsp Hershey's chocolate syrup
1 large tin Eagle brand condensed milk
1/4 tsp coconut flavoring
300 ml cream (I use whipping cream)
1 cup scotch whisky

Beat eggs in blender.  Add remaining ingredients.  Blend well.   Pour into bottles.  Keeps 2-3 weeks in the fridge.
